The cave of Nicolas
In Santorini, on the southern side of the beautiful Akrotiri, right by the sea, there has been a small traditional cave for many years, carved by the hands of Uncle Nikola in his youth.
Built with love and care, it served as a shelter for him and his small boat.
His open heart, the fresh fish he caught himself, and the local wine he always had, turned the small cave into a gathering place for his friends. By his side was always Mrs. Efstathia, whose magical cooking delighted everyone.
The late Spyridon Marinatos, head of the Akrotiri archaeological excavation project, suggested to Uncle Nikola that he turn the small shelter into a taverna, to serve the hungry workers of the dig. He offered delicious traditional delicacies such as tomato fritters, fava, fresh cheese, garlic pasta, and plenty of fresh fish.
Over the years, the cave became increasingly well-known to visitors of the island, as after their tour of the archaeological site, they would head to the beach to sample Mrs. Efstathia’s famous dishes and Uncle Nikola’s fragrant wine.
In 1981, the reins were passed to their daughter, Margarita, who learned to cook from Mr. Marinatos’ wife. With a richer menu and always following traditional methods, Mrs. Margarita continued in the footsteps of her ancestors, enchanting her guests. Her love for cooking and local ingredients — which she and her husband, Nikola, produce themselves — earned her the Gourmet Award for Best Traditional Taverna in Santorini for 2007–2008.
